I tend to forget to. So sometimes ds will end up eating milchig by supper after having fleishig for lunch, without waiting 6 hours, but close to it.

Twice a week they have fleishigs at school, so I make those my fleishigs nights. (I serve shabbos leftovers on Monday instead of Sunday)

Of course.
If you don't, what is your kid supposed to do? It's not his responsibility, it's yours.

My kids are young enough they only wait meal to meal, so it doesn't matter now, but it's definitely on my radar for the future. The hard thing is my kids are in different schools and one is Tuesday and Thursday fleshig and the other is Wednesday fleshig.

Yes, when they eat school lunches, I do. We don't eat a lot of fleishigs, and my kids are old enough that they should be waiting 6 hours.
If you're not sure how long your kids should be waiting at this age, ask your LOR. Could be they don't have to yet. But if they do, then yeah, you have to work around their school lunches.
Just wait until they start having siyumim, or class parties, or whatever. And they come home to your freshly-cooked milchig meal and say "But rebbe gave us hotdogs..."

Are all your kids eating 2 main meals????
My kids eat a main in school /gan so supper for them is usually sandwiches and yogurt or french toast or cheese toast.
Once a week they are given parve meals so beans or chickpeas as the main so I will try make eggs or tival for that day. (You can see their mood the minute they come home that it was parve day.
This is one of the best things I find about sending the kids to Tzharon (it's optional in Israel) that I don't have to make a meal for them

Yes, I do coordinate. It makes it easier like that. When they come home starving they can eat dinner right away and not nosh away till they are parve.
