I'm not into desserts that require too much time or expertise...
but I do love chocolate-covered anything. I made chocolate covered raisins, peanuts, almonds etc...which is really easy-you melt a dark choc. bar in a double boiler, mix in the goods, and drop by heaps on a cookie sheet and refrigerate til hardened.
The only problem here is that once out of the fridge, the chocolate melts very fast, and ends up all over your fingers when you're eating these goodies. (I only consider that a problem in polite company. Otherwise...lick away!)
Is there something I need to be doing to prevent this?

not sure ... but to prevent rock hardness add a bit of whipping cream or pareve milk to the chocolate aka ganache ...

LOL. I do. It doesn't help, the heat from your fingers turns the chocolate coating into liquid.

Maybe theres a special chocolate you can use.
I wonder how the chocolate manufacturers make candy that doesn't melt?

They actually use candy melts, which is a coating for all those things you mentioned and doesn't melt like chocolate does. I think you can get kosher candy melts in baking specialty stores like peppermill etc.

Interesting idea re. the candy melts. But that would defeat the idea of this dessert...the incredible taste of high-cocoa content chocolate!!

your mistake I think is that you refridge it till hard.
so when its out of the fridge it melts.
it never got a chance to dry.
so- put it in the freezer for a moment to set, then leave it out on the counter to dry.
try it, but if it works you'll need tto send me some choc covered nuts. those are my favorite.
