We are a couple with a 1-year-old baby looking to get away for a week from NY. We're seeking a place with stunning nature, preferably in the US. We're willing to travel by car or take a short flight. A minyan and kosher food are a plus. Can anyone help with ideas?

yes, biking and hiking and sightseeing. Or boating/beaches if next to water.

I love colorado. we did vail (kmr) but denver is very beautiful

I personally don’t think nature vacations (unless you’re experienced hiker and biker and have a hiking carrier and infant bike seat and helmet) ever ‘make sense’ with a baby but it’s what you said in your OP that you’re looking for so I responded as such
