Please post any and all dips/salad/sides
THAT CAN BE FROZEN
With recipes please
Really helpful since Tishre is coming soon enough
If every time I cook for Shabbos I make extra and freeze maybe I won’t be so overwhelmed
Also appreciated super fast recipe and tips
For example
I don’t roast eggplant for Babaganush any more. For $4 my grocery sells mashed eggplant in a jar.
I mix that with some mashed garlic confit and Tehina and in less than a minute I have babaganush AND NO MESS
THE extra eggplant I freeze in portions for other weeks

IME matbucha doesn't defrost well. The texture becomes more watery.
You can probably reheat it after defrosting and cook off some of the liquid, but that might defeat the purpose of making ahead.

When I freeze Matbucha I’ll cook it to almost dry, really cook it down
Perfect after I defrost it
