I'm trying to eat more vegan right now since dairy isn't that great for me and I'm not crazy over fish. I have red lentils and green or maybe brown? Lentils. Can you give me some ideas and recipes? Thank you!

Majedra is rice with lentils and fried onions.
It’s delicious.
I make the lentils and rice separately so that it doesn’t become gooey. You can use jasmine or basmati or whatever rice your family likes. ½ cup lentils per cup of rice.
You then sauté onions (generous amount).
Mix everything together or you can leave onions out if ppl don’t like it. Make sure to put decent amount of salt for flavor.
I also put cumin in the lentils before meting with rice.

Both use brown/green lentils (the red lentils collapse and make a great soup that's similar to split peas).
