We'll beH be away for 3-4 days with no access to kosher food or a kosher kitchen. I'm able to bring a kettle and some basics (eg can opener, vegetable knife) but won't be able to bring anything to cook or heat up food. Breakfast will be cereal and milk, lunch will be sandwiches or cold wraps. I'm having a hard time figuring out dinner. What are some dinner ideas that I can do cold that kids will eat?

Grilled chicken- slice into strips and serve over a large salad before serving. Potato salad on the side.
London broil- slice and serve over rice salad.
Pasta salad with chilled salmon cubes on top.
Sesame noodles with sliced grilled chicken on top and some sautéed veggies mixed in.

These are great ideas. I felt like serving cold chicken would fall flat but I'm seeing here that it might work.
Any pasta salad recipes that have a very light sauce and will keep for a few days?
Ra_mom, what's your rice salad recipe?
