It has a decent amount of protein and is considered a full protein because of its wide range of amino acids. If you bulk it up with legumes, nuts, seeds, sweet potato, or avocado, it's more filling and you can raise up the grams of protein just a bit.

Mushroom “ground meat”- onions, garlic, mushrooms, and walnuts with whatever spices you like. Can be put in pasta, or quinoa, basically any starch you like.

Can you share the recipe for mushroom ground meat. What type of mushrooms and how do you spice them?

I use the mushrooms that come in the two pack at Osher Ad (normal mushrooms?)
I process 1-2 onions and heat in a pan with olive oil until they’re starting to get translucent, add 2-3 cloves of garlic. And either the whole double carton (or half) of mushrooms, also processed in the food processor, depending on how hungry we are. Add salt, pepper, garlic and onion powder, along with Italian herbs (if serving with pasta), a bit of red chilis or cayenne pepper, cook until the mushrooms have released their liquid. Add ~100g ground walnuts, and a bit of soy sauce. Cook until it gets a bit browned on the bottom, it should be a little dry and stick together.
