How to make oven salmon crispy

Im trying to figure out how to make salmon come out crispy on outside but moist on inside.

The westsgate pizza shop in Lakewood has it down to a perfection. I would love to figure out how they do it.

yes broiling is the way to go. I use olive oil though not mayo.

I preheat oven to 510.

Sprinkle sugar (I use coconut or date), lemon or lime juice, soy sauce, a little oil. Switch to broil for 10-12 min depending in thickness.

Or use corn flake crumbs!

One of this week's magazines had a recipe for salmon poppers!

Make sure afterwards to keep the salmon skin side up and don’t cover the pan

Bake on 425 for 12-15 minutes
If you want more crispy then broil it after for a minute or two. Not too long or it’ll dry out

I just broil the salmon. it has plenty of its own oil and gets crispy.
I know lots of recipes add more fat to it, and I've yet to hear why.

Grill pan it first for 5 minutes on high flame then bake in oven covered

broil the whole time. how long depends on your oven, on how thick the thickest part of the salmon is, how close to the heat your rack is positioned, and how well done you like your fish. I would say the range is around 10-20 mins. I would check at 10, and then keep checking every couple mins. ideal for fish used to be cooked just until opaque and can flake w/ a fork, so you would test with fork in thickest part. sushi got ppl used to eating raw salmon, so now some prefer to cook it less, but I still prefer mine cooked. (even though I like sushi too).

I broil on high for fifteen minutes, yum!
I put either an oil spice mix or mayo based dressing on top.

I bake covered for a bit with spices on it and then uncover and broil until it like ready. I never add mayo or oil.
