The red lentils become thick and mush kind of like split peas. Usually not made with barley but I'm sure it would taste good anyway.
Green lentils hold their shape and you can see the legumes and the barley in your soup.

2 tablespoon olive oil
1 large onion, diced
2 garlic cloves, minced
2 large carrot, diced
4 large stalks celery, diced
2 cup dried red lentils
8 cups water
2 bay leaves
Sauté onion garlic carrot celery and onion 5 min.
Add the lentils, water, and bay leaf and bring up to a boil. Reduce the heat to low and let simmer, covered, until the lentils begin to fall apart, about 20 minutes.
Turn off the heat and stir in the lemon if you'd like. Taste and season with salt.

I would omit bay leaf and lemon.
I like to add 3 spices that elevates this soup: Basil, oregano, cumin. a few shakes of each! YUM!!
