This is hack for making 8 soups at one time
2 lbs onions, food processer and saute
While onions are sautéing ( stir) processes
3/4 lb carrots (4 big loose 🥕)
4 large stalks celery or celery root
Zucchini
Large turnip
Large parsnip
Pepper ( any color)
10 cloves garlic
Add to onions and sauté another 30-40 minutes stirring occasionally
Cool and divide into 8 freezer baggies.
To make soup, add a baggie to 5 c water, add salt and pepper ( optional squirt ketchup) and cook for 20 minutes.
Can add other veggies like broccoli, cauliflower, mushrooms, potatoes, canned beans, frozen peas and carrots or mixed vegetables, butternut squash, sweet potatoes, etc.
( add more water and cooking time)

Butternut squash, sweet potato, carrots and onion.
Zucchini and onion 1 potato for thickness-optional (can add carrots)
Both above just dice up and add water salt and pepper. Blend once cooked.
Fry onions, add sweet potato and fry for as long as you can before adding water and soup stock blend when cooked.
Dice onions, carrots, zucchini, celery (optional) fry and add water and soup stock, don't blend.
Fry onions, carrots and small amount parsnip. Add water, salt and pepper. Blend once cooked can add celery but remove before blending and cut up small otherwise there is strings.

When I’m in a pinch and in the mood of soup I steam any veg, frozen or fresh. Then I blend it smoothe add cooking liquid and salt.
Broccoli
Cauliflower
Butternut squash
Mushroom

Russian Pickle Soup
(sounds weird but trust me on this one!)
1 large onion, chopped
2 medium carrots, diced or grated
4 stalks celery, diced (optional)
Oil for sauteeing
2-3 medium potatoes, cubed
1 small jar pickles, diced and juice reserved
1 cup rice
Salt and pepper to taste
In the bottom of a medium pot, saute the onion, carrots, and celery in oil until soft. Add potatoes and about 6-8 cups water. Bring to a boil, lower heat, and cook until potatoes are soft.
Once potatoes are cooked, add in the pickles with their juice and rice. Cook on low until rice is cooked. Season to taste.

Saute a couple of onions-you want them golden caramelised to add a yummy sweet flavor. Then add your diced butternut squash, some salt, water to cover and cook.
Then blend it altogether.
Super simple and yummy.

Borscht
(This one normally has tomato paste but you can sub with vinegar)
2 large carrots, grated
4 medium beets, grated
2 tbsp tomato paste (sub with 1 tbsp vinegar)
1 medium head of cabbage, thinly sliced
4 medium potatoes, cubed
Salt and pepper to taste
In a pan, saute carrots and beets until soft. When softened, add paste or vinegar and mix.
Meanwhile, add potatoes, cabbage, and 6-8 cups water to a pot and cook until potatoes are soft.
Add carrot-beet mixture into pot and bring to a boil. Lower hear and simmer for 30 minutes, or until veggies are cooked through. Season to taste.
We serve with a dollop of mayo in place of the traditional sour cream.

Simple Veggie Soup
Using a bag of frozen veggie blend is a huge shortcut to a really satisfying soup!
*Ingredients*
2 medium onions
2 cloves of garlic
1½ tbs of oil
1 package Capri Blend frozen vegetables
2 potatoes, chopped
6½ cups of water
1½ tbs kosher salt or 1 tbs regular salt
¼ tsp white pepper
*Directions:*
Peel and chop the onions and garlic cloves. Saute in oil for about 10 minutes. Rinse the frozen vegetables and add them to the pot, along with the potatoes, water, salt, and pepper.
Cook for 40 minutes, then blend with an immersion blender until smooth.
