Another vote for Niagara. Maybe fly to buffalo and drive to the border from there. I remember great biking through wine country- might have been on the Canadian side though.

Colorado is an option-what is there to do there? and is there kosher food? how close is Denver to Vail>
and what is there to do in Canada? same idea mountains?
