Is there a recipe with no sugar/honey/any sweeteners (other than to proof the yeast) or oil? Actually, just a little oil would be okay if it's really needed-that tastes somewhat decent?

Any challah recipe will have sugar. If you need to completely avoid sugar, go for sourdough.

Hmm ty sourdough is too complicated for me to make! Any recipes out there with very minimal sugar, I'm not looking for it to be sweet
