Some of our usual dairy or pareve weekday meals:

Vegetarian chili with cornbread
Spinach quiche and salad
Baked potato bar with choices of toppings
Sheet pan gnocchi
Breaded fish, rice pilaf, roasted zucchini
Falafel, etc.
Southwestern lentil bake and salad
Homemade pizza
Lasagna and salad
Herbed baked gefilte fish, rice with vermicelli, salad
Italian Wonderpot (1 pot pasta dish)
Scrambled eggs, toast, and crudites (usually Thursday nights when I'm busy making Shabbos)
Indian food (lentil dal over rice)
Mac and cheese with salad

How about baked ziti and salad
Tuna latkes with rice and vegetables
Blintz soufflé
Fish sticks and tater tots and a salad
Pizza and salad
How about pancakes, scrambled eggs and cut up vegetables
French toast and fruit yogurt
Bagels and different spreads- think Melava Malka

When I get stuck I just look at stuff that my family liked on Shavous or the previous nine days menus

I think I originally saw this posted by tichellady: https://www.fromachefskitchen......bake/
I just use a jalapeno instead of the canned chili peppers.

I'll try to remember to post those recipes next time I'm in my kitchen.

I forgot to mention another family favorite dinner - veggie burgers on pretzel buns with roasted onions and mushrooms (cheese optional).
