Mixing by hand …

I mixed by hand & then let rise in fridge.
Just made the braids.

It feels very good & easy to work with B’H !

If you’re not used to it, it’ll be a little hard, but as you get stronger, it’ll become much easier.

Really the part of your body doing the work should be the shoulder (and fists) and NOT the wrists and elbow. the wrists and elbows will tire quickly and are not nearly as strong.

The bigger the bowl/space for kneading the easier.

It’s good to daven in your heart while you knead.

Challah texture for many recipes is often better when done by hand.

Short ppl like me should knead at the table, not a counter.

By now your challos are probably baked!
If this can help anyone I want to tell you what I did.
For years I baked by hand. (Not anymore)
I started off with a hand mixer as if I was baking a cake. I proofed the yeast in the bowl. Then added all the ingredients including the flour. I mixed up to 4 cups of flour with the hand mixer. Then when everything was mixed well and it looked like a thick cake batter, I slowly added the rest of the flour to mix by hand.
This way, even though I ended up kneading by hand, it wasn’t everything and the hand mixer made the job much easier.

I actually did start out mixing it all together with my hand mixer with dough hook attachment. Someone earlier on this thread suggested this. Thank you!
When it was mixed pretty well I took out the dough from the bowl & kneaded it by hand.

Thier out of oven already & look really nice
I’m very pleased.

I used the rebbitzen kaniefsky recipe with seltzer.
Again, another ima recommendation Smile
