Can you do a scrapbook? Each family sends in 1-2 pages with pictures and little notes.
One time we wrote a storybook for my parents, basically making their life into a “fairytale” and highlighting all the things we appreciate about them.

A nice dinner, either hosted by the kids or in a restaurant.
A silver gift like a vase, kiddush cup, or a silver picture frame with their wedding or current photo.

25 messages or notes-my sil did that for her dh and it really appreciated it. She got 25 people that he knew and had them write messages.
