Looking for help with a Shavuos menu!

We moved two weeks ago, so I have limited energy and equipment and would like to go as easy as possible.

I have a few picky little kids, so I need options for them, but my husband and I are up for pretty much anything. Dairy or meat is fine

No milchig oven but I do have a Betty crocker.

Any ideas?

Can you make cheese cake in a Betty crocker?

You can bake salmon, tuna patties, cheese latkes, home fries in the Betty. Pizza.

You can do Salads like Ceasar with parmesian or shredded cheddar cheese or feta cheese salad

You can do yogurt granola with fruit

Yogurt fruit smoothies

I don’t know if you can or not, but I wouldn’t. You can always just make a no-bake cheese cake.

The only things you have to cook are rice, and a stir-fry with peppers, onions, and taco seasonings.
The open up can(s) of black beans, bag of shredded cheese, chop tomatoes, lettuce, avocado, and whatever else you like.

I like tomatillo salsa (tomatillos, finely chopped onion, lime juice, olive oil, cumin) but that's my meshugas.

My thoughts for menu

Night 1
Salmon
purple cabbage salad
Chicken (any way to make it more interesting? My kids only like chicken on bone)
Mashed potatoes
Broccoli

Day 1
Veggie platter
Penne ala vodka
Cheese latkes
Smoothies

Night 2
Salmon
Corn salad
Flanken
Sweet potato fries
Green beans

Day 2
Taco bar
What else should I serve with this?

For dessert brownies for meat meals and no bake cheesecake for dairy meals

How do get the smoothies to be in the original consistency without using a blender on yt?

I usually just serve a dessert with a taco bar. You could add a corn salad too.

Thanks! Thinking that would be enough too since it's the second day of YT and by then everyone is interested in a lighter different meal.

I was thinking I would make in advance and freeze and then shake it up if it separated a bit
