Fun and simple? Or does it have to be impressive and cool?

What country are you doing this summer camp in?

You can just grab a dictionary, and get ideas. But here are a bunch.

Z - Zaydie/bubbie day, either bring one or dress up, etc.

Y - yoyos (you can make your own, or teach tricks from bought ones), or yodeling (could include hiking or singjng)

X- play xylophones and other rhythm instruments, or X ray, do a doctor or hospital theme and activities

U - Up, and do balloon play, or some climbing activity. Ultimate, and do some kind of contest. Under also could work.

V - vineyard - adult coloring pages, an orchard trip. Or vest, and do something construction related, with orange vests.

G - gold, and dig for buried treasure, or have a treasure hunt with clues, a favorite kid activity. Or have a Game day.

I - Ice cream! I mean really, why look any further? Make it, or make sundaes.

J - jumping. Whether it's mats/mattresses, a trip to a trampoline park, or just having them jump around all day, it's good. I suppose, if you're running a camp for the wealthy, you alternatively could teach them all how to jet ski.

K - You could consider karaoke, kumquat and exotic fruit tasting. But the obvious wins IMO would be karate or kites.

L - An easy letter. Letter writing. Lip reading. Learning. Life saving. Lemonade. Loops and looms. Laboratory, play with science stuff. Lake, boating. There are tons of possibilities.

Y - yom tov. Make a sukka decoration. It'll be the end of the summer, so it's a good way to transition into the next season.
I - Israel. Have a pretend trip to Israel and teach some Hebrew words.
L - lollypop hunt. Hide lollypops for the children to find. For an added challenge, assign different point values to different color lollypops.
