I have never had this before - an 8 year old with the constant whyyyy and negotiating, which then turns to arguing.

Other than repeating my point multiple times until I then say I have told you the answer and it’s not going to change, what can I do to help prevent this? Or is it just normal?

They will try their hardest to get me to change my mind and it’s not about unreasonable things from my side…

Don't repeat your point. Smile and say, "because I said so." "This conversation is finished." Then ignore and move on with your day.
Unless you feel it's a topic where negotiation could be warranted.

I respond once. I either choose to give an explanation or not. Then I say I’m done discussing this and I completely ignore them if they ask again. I’ll talk about other things, chance the topic, distract.. but I won’t answer again.

After giving a real response once, when it’s asked again I say “asked and answered”. Rinse and repeat if needed, but usually it does the trick pretty quickly.

I respond similarly to those above- sometimes I’ll add - “I know this isn’t the answer you were hoping for, but this is my answer now and I’m not changing it.” I find the validation helps take away some of the disappointment.
