It might just be the beets.

Are they organic?
I once purchased organic green beans unintentionally and they were extremely earthy — tasted like grass.

For the seder plate, you need to leave it as it is, just wash and grate, no cooking, no lemon juice, no nothing.

If you want it as a condiment for meals, you also grate it raw and then add vineager and salt according to your receipe.

If you want to add beet juice to color it red, that is from cooked beets, also if you mix chrain and beets, the beets need to be cooked.

I am talking about chrain with beets.

not the plain horseradish used for the seder.

I put in very little sugar.

1 tbs to 2 beets.

I dont like it sweet.

maybe the sugar takes away the earthiness and I dont put in enough?

To "save" it, you can try to add some vinegar to your chrain, and then if necessary add sugar, salt and possibly pepper untill you're satisfied with the flavour. It should help a little at least.
(I always use cooked beets.)

chrain with raw beets are delicious it tastes like the storebought chrain. Cooked beets are delicious too and it tastes more like beet salad

Lubavitch P cookbook has a good one:

Two small raw beets, grated
Two cups horseradish, grated
1/4 cup sugar
1/4 cup lemon juice
1 tsp salt
T. Water if needed

Use kugel blade, grates it very fine
