One dish dinners

this shabbos I baked a whole chicken, stuffed with green beans, on a bed of sliced potatoes. it was delicious and I realized that I made a whole dinner in one dish. does anyone else have one dish dinners?

shayna- you feed it till its full LOL LOL

kidding aside, you either put something inside the cavity of a whole chicken, or you can lift the skin of a cut up chicken and put stuffing between skin and meat.

Sheperds pie is also a whole dinner since it has the meat baked, potatoes barbeque sauce and veg like corn and so yum. I make it like a sandwich but not a Shabbos dish

beef and broccoli.
salt and pepper strips of beef saute until brown on both sides. deforst broccoli in microwave, add to beef
mix tomato paste, tomato sauce, some duck sauce, and spices and pour over beef and broccoli add a little water and simmer.

stews- chicken/beef/meatballs with potatoes/sweet potatoes and vegetables with diff types of gravy.

or saute onion zucchini mushroom, small pieces of beef, add rice to the pan.

Risotto

Ingredients:
2 tablespoons margarine
1 ½ cups rice
1 onion, chopped
½ cup celery, sliced
1 cup mushrooms, sliced
1 teaspoon turmeric
2 cups water
1 chicken stock cube, dissolved
½ cup frozen green peas
1 egg, fried

Method:
Melt margarine in saucepan.
Stir in rice and fry lightly until cloudy.
Add onion, celery and mushrooms and stir until softened.
Add dissolved stock cube, water and green peas.
Cover and simmer very slowly for 15 minutes without stirring.
Toss rice and serve hot with fried egg on top.

Casserole

Serves: 7

Ingredients:
1.5kg diced meat (lamb, veal or beef)
4 large carrots
2 parsnips
2 medium zucchinis
6 potatoes
2 onions
2 teaspoons salt
½ teaspoon pepper
½ teaspoon paprika
½ teaspoon garlic powder
1 teaspoon chicken stock powder
½ cup tomato paste

Method:
Peel and chop all vegetables into large pieces.
Saute onion until golden brown in a large saucepan.
Add meat and cook together with onion until meat is starting to cook.
Add all vegetables into saucepan.
Cover with cold water and season with salt, pepper, paprika, garlic powder and add chicken stock powder and tomato paste.
Allow to cook on a very slow flame for at least 2 hours.


Variation:
Peel and chop all vegetables into large pieces.
Saute onion until golden brown in a large saucepan.
Add meat and cook together with onion until meat is starting to cook.
Put onion and meat together in a crockpot or slow cooker.
Add all vegetables.
Cover with cold water and season with salt, pepper, paprika, garlic powder and add chicken stock powder and tomato paste.
Allow to cook for several hours on lowest temperature.

Chicken Casserole

Serves:
4

Ingredients:
1 medium onion, sliced
3 tablespoons oil
425gm can whole peeled tomatoes
2 tablespoons tomato paste
1 teaspoon sugar
1 beef stock cube
½ teaspoon thyme, chopped
½ teaspoon rosemary, chopped
1 teaspoon parsley, chopped
750gm chicken pieces
1 tablespoon plain flour
salt
pepper
125gm mushrooms, sliced
1 tablespoons lemon juice

Method:
Preheat oven to 180°c.
Saute onion in 1 tablespoon oil.
Add tomatoes, tomato paste, sugar, beef stock cube, thyme, rosemary and parsley.
Bring to the boil, reduce heat, cover and simmer for 15 minutes.
Coat chicken with flour, seasoned with salt and pepper.
Saute in extra oil until golden brown.
Drain and place in casserole with mushrooms.
Add lemon juice to sauce.
Pour over chicken.
Bake, covered for 30 minutes.

Chicken Casserole With Wine & Herbs

Serves: 4

Ingredients:
8 chicken drumsticks
oil
2 onions, thinly sliced
1 carrot, sliced
1 celery stalk, sliced
1 clove of garlic, sliced
¾ cup chicken stock
½ cup dry red wine
1 cup tomato puree
½ teaspoon thyme
½ teaspoon marjoram
½ teaspoon basil
salt
pepper
½ cup chopped parsley
2 teaspoons lemon or orange rind

Method:
Brown 8 chicken drumsticks in heated oil, turning several times during cooking.
Add sliced onions, carrot, celery and garlic.
Stir for 2 minutes.
Add chicken stock, red wine, tomato puree, thyme, marjoram, basil, salt and pepper.
Cover saucepan and simmer gently for one hour or until chicken is tender.
Serve sprinkled with chopped parsley and lemon or orange rind.

Casseroles are the best! Once you try a casserole, you will never look back! I have lots more recipes, pm me if you want some more! Smile

I have to say a THANK YOU- for the rissoto and cass. recipie!!!!!

I made them last night for a special 5 year anniversery dinner and everyone loved them!!!!!!!!!!!! Thank you! I even have enough left to warm for shabbos!!!!!! Very Happy Salut Sunny Thumbs Up
