Besides meats and soup. The healthier the recipe the better, and trying to limit potatoes. Recipes would be great. Thank you

Kugel and muffin sides freeze well. Here's some.
Apple Crisp
Ingredients:
4 c potato starch
2 eggs
1 1/2 cups sugar + 3/4 c
1 c oil
salt
2 t vanilla sugar
4 t baking powder
8-10 apples, peeled & sliced
1 1/2 t cinnamon
2 T lemon juice
1/2 c water
Instructions:
Mix first 7 ingredients (except the 3/4 c sugar) together to form crumbs. Do not overmix. Set aside 1/4. Divide the rest into 2 9” round pans. Mix the rest of the ingredients and pour over the crumbs. Sprinkle remaining crumbs on top. Bake at 350° until golden.
Fluffy Carrot Muffins
Ingredients:
8 eggs, separated
3/4 c sugar, divided
1/4 c oil
1 c potato starch
1/2 t salt
5 carrots, cooked and mashed
Instructions:
Preheat oven to 180°. Beat the whites with 1/2 c sugar until stiff. Beat the yolks with 1/4 c sugar, salt, vanilla, oil, cin-namon, and potato starch. Add the carrots and mix well. Fold yolk mixture gently into the whites. Bake in muffin holders for 30 min, or until toothpick inserted comes out clean. (These are so yummy, they can also be used for dessert!)
Apple Kugel
Ingredients:
10 apples
1/4 c potato starch
1/2 c sugar
1/2 c oil
3 eggs
1/2 T baking soda
Pinch salt
1 T cinnamon
Instructions:
Shred the apples. Mix all the ingredients and pour into a 9x13 pan. Bake until just a drop crunchy around the sides.
Mashed Potato Kugel
Ingredients:
8 potatoes
2 onions
3 eggs
1/2 c oil
Salt
Instructions:
Cook and mash potatoes
Sauté onions. Add rest and bake at 350° until golden.
Desserts also freeze nicely if you want those.
