Currently trying to do a high fiber, low sugar, low fat , high protein diet. What foods can I eat on pesach? Any “healthy” cracker /matzahs? Or other ideas? TIA

Fish, chicken, and eggs. Fruits and vegetables. Low fat dairy. You can use whole wheat matza.

Fruits and vegetables, leafy greens, broccoli, brussels sprouts, carrots, avocado, apples, are your best bets for fiber.
Spelt matza
Chicken and fish

Are there any “healthy” pesach yogurts? What should I be looking for. Right now I eat siggi plain ones.

Yes, any plain Greek yogurt (unflavored) is a high source of protein and good probiotics, and no sugar. The flavored yogurts have a ton of sugar. I usually add sliced/chopped fruit on top (I really like pom seeds or banana slices) with some crushed nuts and a little drizzle of honey. Sometimes I'll do a dash of cinnamon as well.
Editing to add in this is for the USA.

I live in Israel. We have unsweetened high protein Greek yogurt that's KFP.
I have no idea what siggi is or whats available outside Israel.

You can buy the low fat cheese snacks. They're 100 calories and pretty good.

Mix 1 cup almond flour with 1 egg. You can add mix ins/flavors like salt and pepper, onion powder and garlic powder, herbs....
Roll out between 2 layers of parchment paper to an even thinness. Slice into crackers. Bahe 350 for 12-15 minutes.
