Simcha? Making a bar mitzvah Sunday night and I’m serving fresh diced fruit at the dessert table.
How long in advance can I cut it up that it won’t spoil?

Umm, I was about to suggest just a few hours in advance. If the fruits are cut up 24 hours earlier, won't they be soggy/stale/drying out already?
I never buy cut up fruit from stores, because I think it's old and not hygienic.

If you cut up a watermelon or honeydew you eat it in one sitting?

And they usually don’t taste good even though it looks so pretty and costs a lot!
I’m about to dump a $15 platter that we barely ate from last shabbos. The fruit was going bad but there was no way to know that when I bought it.

I'll go against the grain. I think it depends on the type of fruit. Watermelon gets soggy quickly so don't do that too early. Cantaloupe and honeydew, if they're on the firm side (not overripe), will keep fine. I regularly cut these up and use all week for lunches. Berries if properly dried are ok for a couple of days. Pineapple is prob a few days if it's not overripe. These things also keep better if they're not mixed together.
I've noticed that the stores always use pretty firm melon and they have absorbent layers to catch juices. You could cut any melon on Friday and store separately, and add a paper towel to absorb moisture.

No matter when you do it, you must keep each cut up fruit in a separate container. Don't mix or it will start to go off in a few hours.
Try to fold up some clean paper towels on bottom of container to collect the excess moisture.
Leave watermelon for night before for sure.
