We got a dehydrator a few years ago, but when we store the dried fruit in airtight containers they seem to re-hydrate. How do we store them properly?

I store them in Ziploc bags and they stay dehydrated. I think you need to dehydrate them a little longer. Also, make sure they're completely cooled down before taking them off the trays.

The process takes so many hours, it's possible we pull them out too early. I'll have to remember to leave them another 2 hours or so after they look ready.
