Looking for variety, One recipie, 2 or 3 ways

Would love some ideas of recipies that can be used in different ways.

I'll start

-Fry chicken cutlets, serve a third for one meal.
-The next third cover with sweet and sour sauce (see recipie below) and bake for another meal.
-The last third cut into fingers and serve cold over lettuce salad drizzled with sauce either as a side or first course.

Sweet and sour sauce: Melt half cup apricot jam and half cup ketchup over low flame. Add one cup water and bring to boil. Pour over chicken cutlets and bake for 20 mins covered or simmer on low flame. Optional: Add red peppers, mushrooms and squash.

Any more ideas?

Make a roast, serve some as sliced meat, and some in steak salad.
Minced chicken fried into patties, some bigger as a chicken burger, some small in the soup instead of matza balls (we don't do gebrokts).
Cut chicken breast into cubes, dredge in potato starch. Bake or fry some as schnitzel/chicken nuggets and put some into the potato kugel mixture.
