Oil-based hamantaschen

Anyone have a recipe for hamantaschen without margarine? I really try to avoid it when I can.

4 eggs
1 1/4 c sugar
1 c oil
1 tsp vanilla
1/2 tsp salt
1 tbsp baking powder
4.5 c flour

mix all except flour
add flour 1 c at a time
mix completely before adding additional cups
dough should be slightly sticky

roll between parchment paper, cut circles with cookie cutter or glass and fill and fold/pinch

bake 350 9-11 min or until bottom slightly browned.

Thanks! Does it need to be refrigerated at all?

I usually do, cuz I make the dough when the mixer is dirty from something else already and dont have time to shape right away but officially the recipe doesnt require it. You may need more flour if it is too sticky to deal with...

Spice and Spirit has a similar recipe called Traditional Hamantaschen. I doesn't say to refrigerate but I think it helps

We don't use margarine all year round except for making hamentaschen. We haven't found any dough recipes that work as well. We only use Earth Balance brand so it's still a little better than regular margarine.
