The yellow cake in the first Kosher Palette Cookbook is delicious! And you can also put in blueberries to make it into a blueberry cake if you'd like- the instructions for that is on the side bar

I once made a marble cake like this. It came out so moist and delicious. I’d share the recipe but I don’t remember which cookbook it was in.

Zucchini Cake With Ginger & Hazelnuts
INGREDIENTS
* 2 cups flour
* 1 teaspoon baking soda
* ¾ teaspoon baking powder
* ½ teaspoon salt
* 1 ¼ cups sugar
* 2 large eggs
* ½ cup vegetable oil
* ⅓ cup orange juice
* 2 teaspoons orange zest
* 2 teaspoons peeled, grated ginger root
* 1 teaspoon vanilla extract
* 1 ½ cups grated zucchini
* ½ cup finely chopped hazelnuts
PREPARATION
1. Preheat oven to 350 degrees. Sift the flour, baking soda, baking powder and salt into a large bowl. Stir in the sugar. In another bowl, whisk together the eggs, oil, orange juice, zest, ginger and vanilla. Pour the wet ingredients into the bowl with the flour and stir until just combined. Fold in the zucchini and hazelnuts.
2. Butter and flour a tube pan. Scrape the batter into the pan and bake until a toothpick inserted into the center of the cake comes out clean, about 45 minutes. Cool the cake in the pan for 10 minutes. Remove from the pan and cool completely on a wire rack. Slice and serve.

Sub Orange Juice for Pomegranate Juice
Mini Chocolate Pomegranate Bundt Cakes:
Ingredients:
4 eggs
3/4 cup brown sugar
1 cup sugar
1 teaspoon vanilla extract
1/2 cup oil
1 cup pomegranate juice
1/2 cup cocoa powder
1 3/4 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
Instructions:
Preheat oven to 350 degrees. Grease 12 mini bundt pans well with floured baking spray. Set aside.
In the bowl of an electric mixer, beat together the eggs, sugar and brown sugar until well combined. Add the vanilla extract, oil and pomegranate juice and beat to combine.
In a small bowl, whisk together the flour, cocoa powder, baking soda and baking powder. Slowly stir the flour mixture into the wet ingredients. Mix until just combined.
Pour the batter into the prepared bundt pans, filling the cavities about 3/4’s full.
Bake at 350 for about 17-19 minutes. Remove cakes from the oven and set aside to cool.
Pomegranate Glaze:
Ingredients:
1 1/2 cups powdered sugar
1 1/2 Tablespoons pomegranate juice
Up to 1 Tablespoon water
Instructions:
In a small bowl, combine the powdered sugar and pomegranate juice. If needed, add a bit of water until you reach a drizzling consistency. Drizzle over cooled cakes.

I have a great, really easy recipe for exactly this but don’t have the cookbook handy. It’s in the Garden of Eating cookbook.
