I am going to be staying at my husband's friend's house for an extended weekend. We asked her bil what we can bring her for a gift. He said that she really wants something specific, and can also use a nice tablecloth. We tried to find that something, but I am not sure it is really right. So do you think I can bring that and also a tablecloth and let her choose? Does it make sense to do this?

I wouldn't do that. You can give her a giftcard to a store that carries tableclothes or buy her one and give it to her with a gift receipt.

Yeah, I don't like the choice deal. I had a relative once who would drey our kops over giving gifts. not a comfortable situation.
give the special thing. watch her reaction. if she really seems sincerely thrilled, you're ok. if not then I guess maybe you can offer the cloth. but really, what if she doesn't like that either

I Can't exactly do that because she lives out of town so a gift receipt won't help her. as far as a gift card, I would have to get one to a store in her town and I'm not sure that's really feasible

Bringing choice of gifts is tacky. The idea is to give her a token of appreciation. If she is very particular, ask someone close to her to buy what she would like and pay for it. Otherwise, wing it. How many of us have stuff that we didn't want sitting in the closets and how many times have you used wonderful gifts received from friends. I know I am constantly using beautiful gifts I received over the years and it gives my family and friends a great feeling when they're here and I use these things.
