Ive ordered 9X13s of
Eggplant Parmesan,
Penne a la Vodka,
Fries,
Garlic knots,
and I plan to make:
A Baked Side of Salmon (edited) and a 9X13 of Balked Ziti myself, because thats easy and quick.
What other 9 X 13s can I make myself, a day or two in advance, that are main dishes, or very tasty sides, that are quick and easy to make, for a Chanukah party buffet?

I’m considering doing roasted potatoes even though I associate that with fleishigs. You can do a veggie dish like string beans.

It was already suggested
Personally its my favorite and go to! But I didnt suggest because OP already has 2 pasta dishes plus eggplant parm. Lots of tomato sauce and cheese dishes already

Lasagna spinach roll ups
I do my recipe based off of this recipe someone once shared here .
I don’t put in artichoke and I use bought marinara sauce and don’t garnish with parsley.
It’s very simple and easy to make . I cook the lasagna noodles in water in a 9x13 pan on the stove top . I sometimes need to do two pans at a time . Then lay out each noodle on parchment paper and dab with paper towel to dry. Then follow instructions for layering and rolling .
I prepare all the filling ingredients while the pasta cooks.
I freeze the roll ups raw until the day of and then bake right before serving .
