I'm in the mood for a change. I was thinking of coffee/chocolate cake if it's moist or another one of your best, light recipe!

I never measure my chocolate coffee cake ingredients, sorry! But I use lots of melted chocolate chips, olive oil and a bit of vinegar and baking soda and it really enhances the texture and flavor of the cake. No vinegar or olive oil taste whatsoever.
I use instant coffee and also vanilla extract in it and sometimes a pinch of cinnamon. Dh requests every shabbos 😂 comes out super soft and delicious, especially if taken out slightly before the middle has set.

I make the chocolate cake from the purple Spice and Spirit cookbook and put a chocolate frosting on top (cocoa, oil, water, confec sugar - can look up exact amounts if you're interested). People usually like it!

I use cadburys. Or nesquick.
Its parev. I UK.
Id use a little less baking powder.
I use soy milk.can use water or OJ aswel.

I make this for YT often.

(With the oil option of course)
I use only 2 bowls. One for batter, and one for everything else.
Make batter, pour half into pan. Make cinnamon/sugar/cocoa part and pour into pan. Use same bowl to make topping (double to begin with, don't make twice), pour half into pan. Pour rest of batter on top. Bake. While cooling, bake the remaining topping. Use same topping bowl to make glaze.

You put half the topping ingredients into the batter too?

Yes. It says to make the toppings twice. Instead I doubled it (it's really way more than you need). Half of that doubled recipe goes into the batter. Meaning layer batter, cinnamon mixture, toppings, batter. Then bake the cake and the remaining toppings get baked for 8 minutes to be used on top of the glaze.
