oooh the more I been making them the more I been making them.
olive dip.
jar of olives drained blend add mayo to your desired liking!
same with sun dried tomatoes (use in oil but drain)
hummus blend a jar of chickpeas with some tahini paste (I don't like a lot) juice of a lemon about 1 tap garlic and 1 tap salt, about 5 tbsp olive oil. blend for a cple min to get it really smooth. (adjust seasoning to your liking)
eggplant a million ways. char it on open flame till proper black, cut in half, scoop out flesh, blend or mash with some mayo, lemon juice, garlic salt and pepper .
or fry a diced onion add some cubed epplant (peel and cube small) fry together for a few min till eggplant softens. add salt and pepper, some vinegar , a little sugar, some parsley flakes....
the dips are very forgiving. season a little and adjust to suit your tastes. you really can't go wrong.

Roasted olives

I jar stuffed olives
I red pepper thinly slices
Plenty sliced garlic

Plenty olive oil

The roast in oven for long time keep mixing till it’s a bit charred on top
