I notice my mayonnaise is always firmer in the winter and more liquid in the summer.

What are you using to make it? When I stopped using my Vitamix and started using a stick blender (aka immersion blender) I started getting much better results.

Immersion blender. Keep the blade on the bottom of narrow jar for two full minutes, bring up slowly. An extra egg than recipe calls for will always make it thick.

I do use an immersion blender - you think the width of the container matters? Interesting about the season making a difference - it makes sense though as ive been making mayo for a while and only recently has this been an issue..ill try an extra egg..

Yes size matters I like to use something similar to mason jar size.

Slow down (pun intended!)
I found that the slower I put in the oil the firmer the results.

got it! Thanks. Do you have a quick recipe? Mine might be the issue -
1/2 cup oil
Pinch of salt & sugar
1/2 cup lemon juice
2 eggs
Yours different?

Most recipes I've seen have 1 cup oil to 1 egg

This is a lot of lemon juice. I do one cup of oil to one egg, salt sugar and lemon juice to taste but only a bit. I make it in the food processor with the S blade. I first put in the egg, salt, sugar and lemon juice turn it on the highest and extremely slowly add in the oil. You should pour in the oil for a good few minutes

1/2 cup oil needs 1/2 tablespoon lemon juice (also known as 1 1/2 teaspoons lemon juice).
You should use:
1 egg
1 tablespoon lemon juice
1/2 teaspoon sugar
1/4 teaspoon salt
1 cup oil
