Need salad ideas please!

I'm running out of Shabbos salad ideas! I usually make a rotation of the following:

Cucumber salad
Beet salad
Some type of cabbage slaw
Israeli salad

My family will not eat corn, so please don't suggest that.
I also don't like to make lettuce salads because I want to do the least assembly on Shabbos possible. This includes any salads that can't sit in dressing overnight.

Hi. How about- tomatoe and onion, portobello mucshroom, cabbage, cole slaw, mushroom pepper, pickle-cucumber.
I’ll bli neder try to think of more if you’d like

Kosher.com has a great mushroom salad.
I use fresh & Sautee instead of canned- irs amazing.
Did you make cucumber salad as a Russian coleslaw or just as a vinaigrette because that's another option? What about a carrot slaw?

I make it heimish style, as a vinaigrette

I saw it at a take out. It’s basically shredded cucumbers and peppers mixed with your favorite coke slaw recipe. It’s delicious.

I make garden salads ahead. Each ingredient cleaned, cut and ready to go. Dressing made ahead. I just dump all into bowl and toss. It's 2 minutes max on Shabbos.

Lentil salad
Chickpea salad
Bean salad
Moroccan carrot salad
Fennel salad
All these last 4-5 days in fridge with dressing.

Quinoa- tastes better the next day. 3 days later gets a bit soggy but still tastes good

Sometimes I add radishes and celery to my cucumber salad if I need a change

I make this one too, but prefer to prepare it fresh. Otherwise tomatoes get soggy and avocado turns brown

Lentil and bean are from silver platter cookbooks

Lentil salad:
2 cans lentils rinsed and drained
1/3 cup red onion diced
1/3 cup evoo
Juice of 2 lemons
2 Garlic minced
1 tsp salt
Pepper
1/2 cranberries (I skip this)
Sometimes I add chopped celery and pickles

Bean salad:
Recipe call to boil 1lb green/yellow fresh string beans. I just buy the frozen and steam in microwave to cook
1 can red kidney beans rinsed and drained
1 can chickpeas rinse and drain
2 cups bean sprouts (I leave out because get brown and soggy)
Dressing:
1/3 cup evoo
1/3 cup rice wine vinegar
2 cloves garlic minced
3 tbsp honey
3 tbsp poppy seeds
1 tsp kosher salt
Pepper

Fennel:
Wash and slice fennel very thin
Add some green apple and celery sliced thin
Dressing is the classic lemon juice, evoo, salt and pepper
I find the green apple doesn't turn brown if you use a lot of lemon juice, but you can always leave it out.

rainbow marinated salad

slice in food processor:
carrots
baby corn
purple onion
yellow and red pepper
zucchini

add canned mushrooms

dressing is oil, vinegar, sugar, salt, pepper, garlic powder.

Lasts for weeks in the fridge

All colors of peppers diced
Carrots diced small
Lots of gherkins sliced
A few cucumbers diced
1 bunch scallions

Vinegar
Salt
Garlic powder
Black pepper
Oil

Best of marinated overnight

Peppers and baby corn (Sliced colored pepper, canned baby corn, oil, vinegar, salt)

Cooked marinated salad (Slice any firm vegetables - I use green and yellow squash, colored peppers, mushrooms, onion, string beans, carrots... - Bring to a boil with vinegar and 2 Tbsp oil. Cook covered until al dente. Season with salt, pepper, and garlic powder.)

Purple cabbage salad (Shredded purple cabbage and carrots, craisins and nuts if you like, vinegar, oil, salt, and sugar)

Carrot pineapple salad (shredded carrots, canned crushed pineapple, craisins)

Celery salad (Thinly slice celery, carrots, onion, maybe some green pepper - I use the food processor for this- and dress like coleslaw.)

Eggplant salad (Grill or roast chunks, add olive oil, smoky paprika, salt)

3 Bean Salad

Broccoli Craisin salad
