What’s good to put on bronzini fillets? I don’t want to use a garlic butter or sweet and sour sauce, I used those already

Olive oil, squeeze fresh lemon, salt and fresh pepper. Delicious!

Dice small and Sautee tomatoes, onions, garlic and salt. Cover bronzini with this mixture and wrap in cedar wrap. This is delicious!
If you live in Brooklyn , freunds appetizing sells tapenade olives. Spread that onto bronzini and bake. This too is Delicious!

I’ve never frozen Bronzino but I would probably spice it once it defrosts.

Rub in olive oil and any spice mix (Montreal steak seasoning, lemon pepper, etc.)
