Having a few close simchas right before yom tov so was thinking of getting a head start and freezing some side dishes. What are some good yom tov side dishes? Looking for good ideas!

Pastrami cabbage eggrolls
Orzo and pastrami
Shlishkes
Vegetable quiche like broccoli, mushroom, sweet potato, 2 tone..
Flaky dough shaped any style like turnovers, pinwheels, danishes, filled with mixed vegetables, mushroom…
Carrot muffins
Doughless potato knishes
Gnocchi with sauce
Sheet pan potato kugal with an added layer of kishka, or sautéed onion and pastrami rolled up jelly roll style.

Mazel Tov..Bh for simchas.. it’s great that you’re planning ahead of the mad rush.. here’s a list of things I’ve heard freeze beautifully.. potato kugel, lukshin kugel- sweet and salt and pepper, orzo with cold cuts, vegetable orzo, farfel, doughless potato knishes, burekahs, trimmed, cabbage and noodles, rice dishes, apple kugel, all cakes and muffins and cookies, and don’t forget the challahs, kishke, kneidelech, all soups- just not potato, anything basically made with flaky doughs..
enjoy the simchas and we should all just be busy with simchas and Nachas

I love your ideas .
How does the jelly roll style kugel work ? You bake the kugel on a sheet pan, add the sautéed onion and pastrami mixture , roll up jelly roll style and bake again? Or don’t bake again? I’m trying to envision how the outside is supposed to look. Dark and crispy like the top of a kugel? Or like the bottom of the kugel which is light colored ?

When your roll it you turn it over so the outside is crispy
