First of all - I personally take off all the scales
Then - if its made in the oven, take the skin off before serving, keeps it moist
On the stove, score and make nice and crispy, then YUM + super healthy fats....

I eat the parts of it that are crispy. One of my kids does as well, and our dog and cat are happy to eat the soft bits. So, nothing goes to waste.

I see sometimes crispy skin in sushi rolls but I would never try it. I guess there are people who go for it.
