I’m Chabad and Ik there’s an Inyan to have a siyum every day. I don’t remember exactly what the rebbe said. But Ik the point is the siyum not the eating meat part

I’m not chabad, but from what I understand about the rebbes mehalech self discipline was a strong component of what he advocated moach shalit Al halev. Limud ha torah and the siyum is in the nine days and you celebrate and eat meat I buy that. Because the point is the learning.
Siyum shopping sounds less consistent with what I know about the rebbe.
But again I’m not chabad I’m just a chasidiste

Returning to the original question:

My child who's allergic to eggs, fish and dairy eats fleshigs.
I cook mostly pareve during the 9 days because my husband can't have dairy, and my non-allergic child and I add cheese to our servings.
Scrambled eggs with big fluffy rolls and lots of veggies.
Veggie chili (beans, tomatos, quinoa base).
Home made pizza
Fish
Sushi salad
Veggie burgers
Baked potato bar
Falafel

There is an inyan in chabad to davka have a siyum each of the 9 days, and sometimes until Tu b'av.

In short, we are adding in simcha in these days in a permissible way, bringing Moshiach closer

However, many do not serve or eat meat at these siyumin.

As others have pointed out, it's really only 6 days. Billions of people survive without eating meat every day -- I'm sure these grown men in good health can do it.

If they are not "full" after eating a nice dinner of fish or felafel or pizza or vegetarian cholent or pasta or sushi or eggplant or Beyond Burger or whatever, they can have a larger helping, or add salad, fruit, etc. You can start with a soup course to help them feel more full. Who want to feel all bloated and stuffed after they eat anyway?

I would make a parve Chulent (I have good recipe) with overnight kugel 1-2x

Other ideas-

Pizza and fries
Soup, Falafel
blintzes
Potato knishes
Sushi
Salad
Garlic knots
Salmon and pasta

A minhag??

There may be many different opinons on making meaty siyumim in the 9 days, so I don't usually comment on those who do it even though I personally find it distasteful. But, calling it a minhag is going too far.

Eggs are very filling! No one will go hungry, that's ridiculous. Pasta or rice, scrambled eggs, toast and baked beans. Yummy and filling supper.
If your kids/dh don't like it they can pick one or 2 of the other things they like. Nothing will happen to them. Cheese toast and pizza are yum too.

Omelettes/french toast/letcho with eggs(cheese)/shakshukah topped with sunny side up
Layered potatoes and eggs baked in the oven
Quinoa
Veg cutlets in mashed bean sauce
Lukshen cheese kugel

Tuna patties
Fish balls in tomato sauce with peas and carrots, can add some pasta into sauce instead of meatballs
Fish sticks
Breaded tilapia or flounder fried
Sesame fish nuggets instead of sesame chicken
Tuna salad
Bbq cubed salmon over salad
Baked ziti
Lasagne with spinach or veg
Pasta shells stuffed with spinach/cheese and topped with tomato based sauce
Eggplant parmesian
Salad with chic peas or nuts
Lox/sardines/ canned salmon/herring
Broccolli/zucchini soup can add melted cheese
French onion soup with melted cheese
Dairy cream of mushroom soup
Parve soup like split pea, mushroom barley
Stuffed portabella caps
Calzones
Creamed spinach
Cubed avocado n tomato salad
Baked salmon
Grilled tuna steak
Breaded fried tuna steak to mimic shnitzel
A&B has franks or cold cuts made from fish not soy

Hungarian red cheese salad made with farmer cheese, sour cream paprika and spices, can add red onion
Fettuccini alfredo/penne ala vodka
Parve pasta salad/potato salad
Stuffed potato with veg and cheese
Layered zucchini, potato, tomato and cheese letcho
Corn shnitzels
Cheese tortellini, pizza balls, ravioli in frozen section
Cheesecake made with farmer cheese is filling
Pb&J sandwiches
Schwarma made from tuna steak or mushrooms
Scrambled eggs with fried lox
Paninins/avocado with cheese or tuna melts
So many foods that are not meaty

I think it's crazy that some men NEED meat every day. It's so expensive anyway, it's so entitled and spoilt. They might prefer meat, fine but they can also learn how to deal with other delicious foods.
I'm grateful that my husband is okay with tival sausages in a bun with some bought cut up lettuce. He wouldn't dream of complaining. He's grateful for whatever I make. He doesn't want me slaving in the kitchen all day every day. I have other things to do besides making supper.

It's not, sorry op. I just feel bad for all the wives out there (and future wives) that have to put up with this on a daily basis, that for 6 days it's a struggle for them so they need to make, or attend a siyum every night.

I'll be honest.
I prefer fleishigs. It's easier and less complicated. And yes, they're more full and eat healthier.
A one dish chicken and brown rice with steamed or roasted broccoli on the side. Very simple to make. No stress. Everyone eats it, everyone is full and that's it

The parve and dairy meals are often less filling so I have to ALSO make a soup AND a salad AND a fruit thing.
And there's a lot of filling up on carbs with some protein (like pasta).

So I can serve rolls and omelettes. But then I also make a soup and salad. And then 2 hours later, they're rummaging again because- teenage boys.

That doesn't make my boys or husband selfish. But it does make the Nine Days challenging.

And honestly it feels off to me. So many of these suppers that people are saying involve multiple courses.
People's Nine Days Suppers resemble Shavuos Meals with the level of choices, courses, patchke.
But no one asked me.
