It's called Olive Trees and Honey : A Treasury of Vegetarian Recipes from Jewish Communities Around the World. By Gil Marks. Amazon link:

http://www.amazon.com/Olive-Tr.....r=8-1

I bought this cookbook around Rosh Hashanah last year, and have since tried quite a few recipes out of it. Pretty much everything has been a hit!

It's also got a lot of history and discussion of different traditions and ingredient information. (ie Carrots = history of the vegetable, plus a bunch of carrot dishes including a super delicious Ashkenazic Baked Carrot Kugel as well as carrot dishes from Egypt, Morocco, Bukhara, etc.)

If anyone is looking for a good vegetarian cookbook, IMHO this is a good choice!

FYI you can download the kindle app on your phone for free and purchase digital download of this cookbook (which is hard and expensive to obtain) for $2.99 !! Well worth it!
