Looking for ideas which doesn't need any or hardly any cooking at all.

Pizza! I usually make the dough as I find it quick and easy but I’ve used frozen dough before too.

One pan dinner in the oven: chicken botttoms and rice or potatoes or quinoa. Add water and spices, or if you prefer, some kind of sauce. Bake for 3 hours. Done. Sometimes I'll dump a bag of frozen veggies into the pan too, or I'll slice up cucumbers before serving.

Baked ziti, one step in one pan. Toasted cheese sandwiches. Or just pasta with a bought sauce poured over. Baked potatoes in microwave. Easy stuff like that to put together in minutes.

We usually have shabbos food like chicken soup, chicken from the soup, potato kugel, farfel.
Or franks n potatoes

I make extra Monday through Wednesday and then Thursday is usually a combination of leftovers.

I don’t understand having shabbos food Thursday night. Doesn’t that take away from the specialness of Shabbat food on shabbis?

Easy things that kids will eat and that don't take too much prep:
Noodles with cheese, hot dogs, sometimes deli sandwiches (in a fleishig sandwich maker, so easy and gives the sandwich a yummy twist to it)

No, the food tastes way better on shabbos. Shabbos gives the food a special taste.

I don't either understand it. That's why we have Shabbos leftovers on Sunday night.

We do Cholent
I put it up Thursday morning and put it into the fridge after the last person eats. On Friday I put it back up an hour or 2 before shabbos.
We also sometimes grill, burgers, hot dogs or grilled chicken.
