I keep it pareve to start. Salmon and rice, and potato kugel. (Or, dairy, such as potatoes and cheese in the microwave).

Then after each kid takes a shower, he or she can sample some chicken/meat/or soup.

Make an easy chicken cutlet and serve with shabbos side dish at regular dinner time. Even I can't wait that long for food. I find we eat some of the shabbos meal earlier and eat less at the late night meal.

How do you do potatoes and cheese in the microwave?

Regular filling lunch.

After baths dinner from the Shabbos meal. My kids are young and don’t stay up in the summer.

Yellow (Yukon Gold) large size potatoes (I save the largest ones from the bag). Put two or three on a real milchig plate and poke a small set of hole with a fork so it doesn’t explode. Microwave on highest temperature for 5 minutes on each side. Then take it out, use a knife and fork to slice each potato in half lengthwise. Then sprinkle cheese on each exposed half or put a half a piece of American cheese. Then put back in microwave for 30 seconds or until the cheese is melted. The result is so beyond buttery soft and delicious. Can also serve with salsa on the side.

(ETA: do not use grated Parmesan cheese because that’s aged and you would need to wait 6 hours before eating meat. I use shredded mozzarella, shredded cheddar, or American).

Pasta salad.
Veggie platter with dip.
String cheese, hard boiled eggs.
Soup.
Nuked potatoes with cheese melted.
Cake/cookies (that they can taste before Shabbos Smile )

If they don't stay up for the meal, Shabbos food.
