We have invited 4 young couples for Shabbat lunch, all close family, and so far only one couple has confirmed. The others are generally hard to pin down on RSVPs, but they often do show up in the end. We want them to feel welcome, and bugging them for responses just stresses me out. And probably them too, while they wait to see if something better comes along
I am looking for menu ideas for dishes that can be doubled in 10 minutes, saved for later in the week, or frozen without damage.
Planning suggestions are also welcome.

I'm impressed with your generous, relaxed attitude!
Deli roll freezes well so you can make a lot and only use what you need each week.
Extra cholent could be as quick as adding more beans, barley, meat and spices to your crockpot (peeling and cutting more potatoes and onions is extra credit!).
I'm not such a fan of potata kugel that's been frozen, but overnighting it for Shabbos day seems to work well so you could freeze what you don't use.
Yapchik - again, I think if it's been frozen and then overnighted for Shabbos day it's fine, but in my house any leftovers would be eaten during the week.
I usually make a big batch of 'sauteed' onions (in the oven) and freeze portions to use as needed. This is great for 'instant' onion dip.
Extra shnitzel or grilled chicken (served in a salad or plain on Shabbos) make a great supper Sunday and Monday.

Keep deli in fridge. It last a long time. Can quickly put together deli platter if needed.
Freeze deli rolls. Add defrosted deli roll to deli platter.
Cholent is easy to add to.
Keep small frozen kugels in freezer. Can add 1-2 to crock pot depending on guests.
I like to make mini apple cobblers or other kugels in cupcakes. This way I only need to defrost the number I need.
Can always add frozen kishka to cholent of feel need more food.

Will you only know when they arrive? Or on Friday? Set the table expecting everyone that didn't say no!
Rolls - in case there are latecomers requiring lechem mishneh
Dips
First course:
melon or grapefruit - no problem to add more
fruit soup - you can freeze it
gefilte fish - additional can be served at seudat shlishit
salmon or salmon quiches- leftovers for the week
Main:
deli - can freeze the rest for a deli roll later, or hot cut sandwiches one night for dinner
grilled chicken - leftovers are great, or if you need to extend, make it a grilled chicken salad
tabouleh or quinoa
pickles, olives, etc.
grilled vegetables - great for leftovers
tomato salad - just add a few more!
salad - easy to enlarge at the last minute! (do you open cans?)
Ditto other posters regarding on the individual things for dessert....
