Cinnamon Zucchini Cake

I found it online and DH and our 'regulars' really enjoy it. kids gobbled it too.

Preheat oven to 325.

Mix all these in one bowl:
3 eggs, 1 cup oil, 2 cups sugar, 2 cups hand-grated zucchini (grates very easily), and 2 tsp vanilla.

In another bowl:
3 cups sifted flour, 3 tsp cinnamon, 1 tsp baking soda, 1/4 tsp of baking powder, 1/4 tsp salt.

Combine into one bowl and put into greased and lightly floured pan. Bake at 325 for 60-70 minutes or until done. (I think mine always bakes less)

I always use a 9 x 13. Hand mixed.

mine comes out like a cake!

I should add, it's not like a regular chocolate cake, but it definitely doesn't have a banana bread consistency. it's much closer to a cake.

squash, half of a large one I think. no more than one normal-sized zucchini.

mandksima, I rinse it only then hand grate. leaving the peel on.

Tehilla, you forgot to tell everyone to double or triple this recipe because IT IS SO GOOOOOD! We just "tasted" it and 1/4 of it is gone. My DH nearly choaked when I told him it was zucchini (he doesn't eat it normally) after he downed 3 peices or so. I didn't tell my kids but they wouldn't care, they just said it was delicious.

I just gave the recipe to my mom who'll love it, thanks so much!

here's my big question - can u see or taste the zuchinni at all?

I can usually fool dh into eating stuff he normally wouldnt if there is absolutely no trace of being able to see or taste the health.
but he likes cinnamon, so I'd definitely give it a shot.

Just made this recipe-added a quarter cup chai tea and some apple butter and put the batter in a muffin tray-we'll see what happens.....

I just threw one of these into the oven. I hope to let you know how it goes. My Bar Mitzva boy made it with me, so he KNOWS about the zucchini Twisted Evil He's also a major "istenis" so he might turn my family against my zucchini cake!

Well, Mandksima was right!! My family is devouring it in the kitchen!
not surprising when you consider that it is a bit heavy on sugar and oil...2 cups of sugar is quite alot for a non chocolate cake. I'll see if I can cut down next time. Also, maybe I'll substitute applesauce for about 1/3 of the oil.

mmm this is one of my favorites!!! and my mother bakes it in a bundt pan puts raisins in. once my father found out there was zucchini in there he didn't touch it again. Wink
