We were supposed to have Rav Moshe Shternbuch, of the Eidah Charedis... but he ended up being out of the country at the time (I think in south africa), so we ended up having Rav Shirkin, another big South African rabbi living in israel...

In France too you don't choose who does it, it's the rabbi of the shul (and you can only get married in a shul or you need an agreement from the rabbinate and it's hard to get.
But we got married in Israel. Dh's rav did it, although it was supposed to be one of his cousins who is also a rav, but he was embarrassed to do it because dh's rav is a gadol in their circles, so he just read the ketuba. The rabbi of the shul (great synagogue in Jerusalem) was there too and didn't do anything.
Some people in my family didn't want dh's rav because he's not too enthusiastic on Israel, so they pushed for the cousin, but since he was embarassed in the end it was settled like that.
Speech: no speech, bh. A rav did a speech at our engagement and it was really silly. His students had played a prank on him, telling him in France it was the minhag to mention the President as much as possible during the speech, so it was just CRAZY. He also didn't know me at all and said stereotypes (so nice, so sweet... when everyone who knew me knew I have a strong character ). He also messed up while mentioning my yichus (basically he only mentioned a branch and the others were mad). In the end he called to appologize.
