I’m gonna guess there are carrots, onions, celery, and parsley in it

They just call it veg soup..
And I figured I could guess the vegetables 😂 - it’s the spice mix I’m looking for.
Does it look like Hawaj???

Make like any vegetable soup but use Hawaij spice mix, a bit of cumin, and salt.

Hawaj is gingery/sweetish/very earthy. It’s the smell you imagine when you think of sfardi food (specifically Yemenite), similar to what the shuk smells like.
It’s yellowish orangish.

Ok thanks - how much hawaij and salt for an 8 qt pot? And do I do anything to the veg before just putting them in water? Anything to thicken it at all?

Saute the vegetables. Add the Hawaij, cumin and salt. For 8 cups water, you can start with 2 tsp Hawaij, 1 tsp cumin, and season with salt while you taste. You can use beef bones if you'd like.

The veggies don’t look sautéed. There would be a lot more oil floating, and the onions would be slightly colored. But your way sounds way better. You should call them up and suggest it!
