I am in a licensing program where I need to video myself teaching and send it in. I am currently teaching via zoom. I have tried to hit record on zoom but it doesn’t show me or the students while I am writing on the board so I need another option. Any ideas of how to do it? I basically need my computer screen videod for 30 minutes without being overly distracting to the class.

It’s low tech but you could just set up another camera next to you with both your face and your screen in the shot.
Or record the zoom while simultaneously having a separate camera videoing your face the whole time

Get snagit. I think they have a trial option where you can get it free, it's a very user-friendly screen capture program
