I recently saw this idea on Instagram. It was easy, fast, and delicious. You make a regular ground chicken/meat mixture. Fill 1/2 pita and grill it or fry it. I "fried" it in a grill pan.

Interesting. It didn't flop out of the pita? How'd it stay in?

Will your kids eat cold pasta? I can live on pasta salads in the summer. It's really inexpensive to make, and a good way to use up leftovers.
Make your pasta, and rinse it really well in cold water. Toss with a bit of olive oil, and put it in the fridge to completely chill.
Sautee a bunch of veggies that will stay firm, like carrots, frozen peas, and zucchini.
You can add fresh or sundried tomatoes, black and/or green olives.
Diced leftover chicken, strips of lunch meat
Feta cheese, or any other types of cheese they like, cut into cubes.
Get creative with mixing up the types of food your kids like.
Toss everything with some mayo, salt, pepper, and a bit of Italian spices. I like a little bit of Mrs. Dash original (leave out the additional black pepper, Mrs. Dash has lots in it already.)
This will keep in the fridge for several days, and makes a great midnight snack. The carbs make me sleep like a baby!

You can quarter the pita, put in 2 tbsp raw seasoned ground beef in each quarter. Brush top and bottom of pita quarters with olive oil. Bake on a cookie sheet at 400 for 20 minutes.

Not at all. It's a stiff mixture. No eggs just meat, spices, and breadcrumbs maybe.

Tacos (serve in tortilla bowls to make out exciting)
Baked ziti/manicotti/lasagna

Chicken soup in crockpot
Meat sauce (can serve over rice/pasta, or in sandwiches)
Chicken fingers/fishsticks (slice prebreaded in half, bake, serve with mustard/ketchup for dipping)
Easy sides are oven fries, root vegetables chips, roasted vegetables, crudites with healthy dip (mustard, chummus)
