I'm desperately in search of new dip ideas. Non-mayo based, please. We've been having lots of eggplant, so not that either. Something with beautifully roasted vegetables.

I regularly do this on shabbes (I choose a few among those):

  • guacamole: one avocado, one hardboiled egg, ground together, with pepper, salt, lemon
  • humus: cooked chickpeas, garlick, lemon juice, t'china, oil, salt, pepper, red paprika
  • t'china: t'china, ground garlick, lemon juice, salt, pepper (you have to dose the water right)
  • cucumber salad: grated cucumber, 1 clove of garlick, red paprika, salt, drop of oil, balsamico
  • red cabbage salad: grated red cabbage, sliced apple (2c:1a), balsamico, cumin, salt, pepper
  • white cabbage salad: grated white cabbage, cumin, salt, pepper, oil
  • mushrooms: slice mushrooms thinly, bring water with olive oil, balsamico, bay leaves, salt, pepper to boil and pour over mushrooms
  • carrot salad: grated carrots, lemon juice, salt (dill) (pineapple)
  • moroccan carrot salad: sliced carrots shortly boiled in salt water, sauce: oil, garlick,
  • red paprika, salt, pepper (coriander leaves or parsley)
  • cherry-tomatoes: heat olive oil in pan, add sliced garlick, add tomatoes cut in half, sliced black olives, salt, pepper, and basil at the end,
  • beetroot salad: boil beetroot till soft, slice or grate, add oil, salt, pepper, cumin
  • beetroot pickle: finely dice beetroot, boil in water with vineager & salt..
  • pickled lemons (store-bought)
  • pickled mini-eggplants (bought)
  • dried tomatoes in oil (bought)
  • olives (store-bought)
  • waldorf salad: grated celery, grated apple, walnuts
  • pseudo-waldorf salad: sliced celery stalks, sliced apple, lemon, walnuts,
  • (celery salad: grated celery with lots of mayo, lemon, salt)
  • fried zucchini slices
  • fried eggplant slices
  • baba ganush: roasted eggplant, ground, with garlick (or golden-brown onion) and t'china, no mayo
  • breaded sellery slices (patchkerei): shortly boil sellery, dunk in flour, egg, breadcrumbs, fry
  • cherry tomatoes
  • radish
  • veggie sticks: carrot, cucumber, bell pepper, celery stalks, white radish,
  • white radish, thinly sliced, with a bit of salt alternating with cucumber slices
  • (selfmade aioli (garlick mayo)) (sauce tartare) (mayo with ketchup) (mayo with mustard)

Seuda shilisht: sliced mozzarella (with a drop of balsamico, salt, pepper), tomatoes, basil leaves (red-white-green: italian flag)[list]

Seconding the roasted garlic/garlic confit. Bunch of cloves (buy the prepeeled to save time), rosemary, salt, paprika, ginger, sage, basil, Oregano, etc etc. Pour enough olive oil over to cover. 45-55 minutes at 350. Keeps for 3 weeks or so (but I doubt it will last that long!).

Other ideas:
Bean dip (try different varieties)
Salsa (can make it fun with mango and pineapple varieties)
Onion dip (slowly sauteed sweet onions with lots of oil/margarine for a long time. Once deeply golden, take off heat and mix with nutritional yeast and salt, if needed. Drop of mayo optional)
Marinated vegetables (bell peppers, mushrooms, eggplant, etc)
Guacamole (diced avocado and tomato with salt, pepper, and lime juice. Diced onion optional)
