We love the kind that comes in the dip style containers like Golden Taste or Menachem's Dips etc and I was wondering if there's a way to replicate it at home.
It's little bits of eggplant with onions (sometimes also mushrooms) and peppers and has a sweet and sour brownish sauce.
Anyone have a recipe to share?
Or any other eggplant salad/dip ideas.

Marinated Eggplant
1 eggplant, sliced and fried
1/4 cup vinegar
1/2 cup water
2 tsp sugar
1/4 tsp salt
5 garlic cloves, crushed
1/4 red pepper, finely diced
Combine vinegar, water, sugar, salt, garlic, and red pepper in a 2 lb. container. Cover and shake until combined.
Add fried eggplant slices. Give container 1 shake.
Let sit in refrigerator for a day before serving.
If you like it sweeter, go for it.

It was a hit! I cubed the eggplant instead of slicing it and baked it instead of fried. I also roasted some baby bell peppers and added it to the marinade. I skipped the red pepper since we're out (shamefully!) and subbed regular black pepper.
It was a big hit! Very delicious. Even the marinade left in the dish went! Thank you so much for the recipe!

Can I substitute the vinegar with lemon juice or is that nishty?

I use a very similar recipe- e1 loves it!
I use honey instead of sugar, sometimes I add al ittle bit of brown sugar.
I think using lemon juice instead of the vinegar is "nishty"

I'm bumping this up since It's a really easy recipe and comes out delicious!!!
