"Caviar" is just the name. No fishy stuff whatsoever. Great dish for vegetable lovers and people on diets.
Dice one large onion and shred 2 medium carrots on the shredder with large holes. Sautee in oil. In the meantime, peel and shred 4-5 medium zuccinis. Add to the sauteed onion/carrot mixture. Season with salt and pepper, lower flame (add a bit of oil, if necessary) and ler simmer until zuccinis are soft (u don't need to cover it). When they r almost done, take 3-4 plum tomatoes and dice them. Add to the mixture and mix well. Taste to adjust salt. Once all vegetables are soft and most of the liquid is evaporated, turn it off. It is absolutely delicous warm and cold. Try spreading it on a piece of bread - YUMMY. This is a very very old recipe. |
This sounds really, really good. I'll have to remember it next time zucchinis go on sale.

This was an almost perfect shabbos, B"H. The food came out good, the usual, but everything was "gelungen".
Famous Homemade Challah
Baked Gefilte fish, white and salmon with
tossed salad, babaganush, fried eggplant salad, chumus
chicken soup with fine lukshen
broiled chicken, amazing potato kugel, zuchinni and carrot stir fry
apple strawberry compote
Homemade challah
Baked Gefilte Fish
avocado tomato salad, tossed salad, corn salad, babaganush, avocado dip
cholent
breaded shnitzel
lukshen kugel
apple strawberry compote
Everyone enjoyed the food and the divrei Torah too, an important part of the menu. Although the food is simple and conventional, everyone was satisfied. and somehow I wasn't too tired, so I was able to continue with SMV Tehilllim after the daytime meal.
I like keeping things simple and repetitious! The cooking is almost on automatic that way, and probably the only way I can manage when time is so tight.

Clarissa, did you check with your LOR to see if your meal is shabbosdik?
Hmmm. . . I have Tofurkey sausages, maybe I'll make a stir fry with those for Shabbos dinner. Thanks for the idea!

I've been thrown out of two Orthodox shuls for my kugel-less meals. G-d forbid my new rav finds out about my menus. I often rub a little potato behind each ear so he'll think he smells potato kugel wafting when I walk by, and I smear my rings with baby cereal so it appears as if I've been making kneidlach.

I think it's funny that so many people are put off by having spaghetti and meatballs (or something similar) for Shabbos meals. To me, Spaghetti and meatballs is harder to make than shoving a chicken in the oven and it's more special because we have chicken during the week all the time, but only eat meatballs on shabbos.

DH hates tomatoes, but will eat tomato sauce or marinara sauce (go figure!). Can I substitute the sauce for the tomatoes and, if so, how much sauce would you recommend? It sounds yum!

Maybe hamburgers or spaghetti and meatballs |
Funny, until now I thought I was the only one who was "brave" enough to serve hamburgers or spaghettin and meatballs for Shabbos.
It happens that I have a fantastic sweet and sour sauce recipe to cook the meatballs in and people love it!
I came to the conclusion that any dish that makes you look forward to your Shabbos meal is appropriate for Shabbos.

I think people are ok with serving sweet and sour meatballs with rice for shabbos, however hamburger or spaghetti with meatballs in marinara sauce is a big no-no.

It's all about the sugar. If the marinara sauce was mixed with a jar of grape jelly or a cup of ketchup, it would be an acceptable Jewish recipe. Or if there was some sort of pastry involved -- puff or phyllo or something.
Hamburgers are acceptable if modified --dip a hamburger in canned pie filling, roll it up in pastry and call it a hamburger-fruit roll-up, and it gets served.
Jews love their sugar and white flour. We're non-traditional here, but I confess we go through a fair amount of sugar here, as well.
