Great addition for Erev Shabbos meal or Shaloshudos
Asian Style Brown Rice Salad
I. Brown Rice
1 c long grain brown rice*
2.5 c water
1 tbsp Osem powder (chicken)
1 tsp oil
1/4 tsp salt
Bring water, Osem powder, salt and oil to a boil.
Add the brown rice and lower heat to minimum.
Cover and cook for 50 minutes.
Take off heat and let cool at least 10 minutes.
*you can increase rice up to 1 1/2 c but adjust water accordingly.
II. Salad Ingredients (prepare while rice is cooking)
Place in a large bowl for mixing:
1 red bell (capsicum) pepper [can use green, orange or yellow also], seeded and diced
3-4 green onions (shallots), cleaned and sliced using both white and green parts
1/2 c craisins (or yellow raisins)
1/2 c roasted salted peanuts (cashews are great also)
1/2 c olive oil (yes, olive oil!)
2 tbsp dark soy sauce
2 tbsp honey
1 tsp onion powder
1 tsp garlic powder
1/4 tsp black pepper
Mix all these together.
Add HOT brown rice (it absorbs better when rice is hot).
Let sit a few hours for flavours to mix.
Best served at room temperature.

This sounds delicious! What type of rice do you use? I've got brown basmati in the house. Would that work?

Yes, I'm sure the brown basmati will work fine. Just cook it according to what the normal directions are for brown basmati. I use regular long grain brown rice (you know, the generic kind from the supermarket). Yours may have different rice to water ratio.
BTW, you can increase the rice up to 1 1/2 c (so anything between 1 and 1 1/2 c raw rice) but we like it best with 1 cup or it's very "rice-y"
It's a super easy recipe and absorbs the flavours really well. Adjust as you see fit! Hope you enjoy it.
